This year I am making Christmas dinner! I am not making turkey or ham. We are tired of that. I am making Pastitsio. It’s a crazy good pasta casserole with a fluffy dough thing on top and a ridiculously awesome sauce inside. It’s one of my specialties and something Harknell has been hoping I would make for months now. :D Here is my recipe:
Pastitsio:
Meat Sauce:
2 Tbsp Extra Virgin Olive Oil
2 White Onions diced to 1/4 inch
2 lb. ground meat (traditionally it is lamb, but I do not eat lamb so I use ground beef or turkey. If you are vegetarian you can use Quorn.)
2 Tsp Coarse salt
2 tsp Cinnamon
1/2 tsp Ground Pepper
1/4 Tsp Nutmeg
1/2 c Red Wine or Red Cooking Wine stuff if you can’t get real wine
(1) 6oz can Tomato Paste
2 Bay Leaves
For the Béchamel:
6 tbsp unsalted butter
9 tbsp flour (1/2 c + 1 tbsp)
2 tsp baking powder
3c milk
1c Parmesan Cheese
2 tsp salt
1/4 tsp pepper
1/4 tsp nutmeg
Pinch of Cayenne Pepper
(1) 1 lb box of macaroni
Heat olive oil over medium heat. Add onions and cook until softened. Add meat, salt, cinnamon, pepper, nutmeg. Cook until no longer pink. Add wine and cook until evaporated. Stir in bay leaves, tomato paste and 2 cups of water. Simmer covered for 30 minutes. Skim off fat if any. Set aside covered.
For the Béchamel melt the butter in a saucepan over medium heat. When it is bubbling add flour and baking powder. Whisk constantly for 1 minute. Slowly pour in milk. Continue whisking constantly until mixture becomes thick. Remove pan from heat. Add Parmesan cheese, salt, black pepper, and nutmeg. Add a pinch of Cayenne Pepper. Set aside covered.
Preheat oven to 375. Prep a 9×13 inch baking dish. Bring a large saucepan of water to a boil for the paste. Cook only 2-3 minutes so that the pasta is very al dente. Drain.
Stir pasta into meat sauce. Put into the baking dish. Spread béchamel over top. Bake until golden. (30-40 minutes.) Let cool for 10 minutes. Eats.
I think I want to get this game! It reminds me of The House of the Dead, which Harknell and I used to always play. I was never very good with Resident Evil because moving the characters seemed a little weird to me. I’d watch as Harknell played. This game should be perfect for both of us.

Ever wonder why Star Wars Episode 1 was disappointing? I have. I used to be a huge Star Wars fan. I went to see Episode 1 during opening week. I was so excited…but I left the theater feeling like I just watched a pile of crap. Some friends brought Episode 2 over and forced me to watch it. I never saw 3. I don’t want to.
This guy breaks everything down in an entertaining way. This is a must watch if you are a Star Wars fan or ex-Star Wars fan. THIS IS A MUST WATCH. I feel vindicated:
